Meet The Chef

My Name is Brendan. I have been a Chef for 19 years and I love my job!
​
I spent 8 years working at Leeds Castle and am now honoured to be a nominated catering supplier for one of their venues, Battel Hall.
​
I fell in love with smoking meats and enjoy the challenge of controlling a live fire low and slow. The complexity of flavour and melt in your mouth texture gets me excited every time.
​
But my real passion is to give an enjoyable, unique and comfortable dining experience to my clients - bespoke menus are available upon request and I even do the washing up afterwards!
